INGREDIENTS

2 medium zucchinis, shredded (about 2 cups)

2 eggs, beaten

½ cup grated Parmesan cheese

¼ cup fresh herbs (parsley, chives, or dill), finely chopped

2–3 tbsp gluten-free flour

Pinch of salt & black pepper

Olive oil for frying
INSTRUCTIONS
1. Shred zucchini and squeeze out excess water with a clean towel.
2. In a bowl, mix zucchini, eggs, Parmesan, herbs, flour, salt, and pepper until combined.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop small rounds of batter into the pan, flatten slightly.
5. Fry 2–3 minutes per side until golden and crisp.
Serve hot with a dollop of sour cream or yogurt dip. Fast, easy, delicious, and healthy!
