INGREDIENTS
2 cups freshly cooked Bay of Fundy lobster, chopped into bite-sized pieces
1 tbsp mayonnaise
2 tbsp celery, finely diced
½ tsp fresh parsley, finely chopped
Salt and freshly ground black pepper, to taste
Soft rolls (preferably top-split)
Crisp lettuce leaves
INSTRUCTIONS
1. Prepare the filling: In a bowl, gently mix the lobster, mayonnaise, celery, parsley, salt, and pepper until well combined.
2. Toast the rolls: Lightly butter the sides of your rolls and toast them in a pan until golden and slightly crisp.
3. Assemble: Line each toasted roll with a crisp lettuce leaf, then generously fill with the lobster mixture.
4. Serve: Best enjoyed fresh with a side of sea breeze and sunshine.
Tip: Serve with kettle chips and a splash of local lemonade or white wine for the full East Coast experience.
