Serves 6
INGREDIENTS
1.2–1.4 kg chicken breast or thighs, sliced
2 large onions, thinly sliced
2 red peppers, sliced
2 yellow peppers, sliced
4 cloves garlic, minced
Traditional Fajita Seasoning
10 g ground cumin (about 2 tsp)
10 g paprika (about 2 tsp)
5 g chili powder (about 1 tsp)
5 g ground coriander (about 1 tsp)
Salt and fresh cracked pepper, to taste
Olive oil
PREPARATION
1. Heat olive oil in a large pan over medium-high heat.
2. Season the chicken with cumin, paprika, chili powder, coriander, salt, and pepper.
3. Cook chicken until golden and fully cooked. Remove from the pan and set aside.
4. In the same pan, add olive oil and sauté onions with garlic until soft and lightly caramelized. Remove and set aside.
5. In a separate pan, heat olive oil and cook peppers with salt and pepper only until slightly crisp.
6. Keep chicken, onions, and peppers separate for serving.
Serving Tip: Serve hot with warm tortilla wraps. Present everything separately so each person can build their own fajitas and top with cheese, sour cream, and guacamole.
